Zucchini Bread is a healthy, low fat, low calories, low sodium, low cholesterol, low sugars, heart-healthy, Weight Watchers (3) PointsPlus and diabetic friendly recipe. Healthy, moist and delicious. Makes 10 servings. Zucchini Bread will be loved by all of your family, zucchini-breadfriends and guests.

Ingredients:

Non-Stick cooking spray
1-1/2 cups shredded zucchini
1-1/2 cups all-purpose flour
3/4 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp salt
1/3 cup Splenda Sugar Blend
1/4 cup 2% milk
1 lg egg
2 tbsp trans fat-free margarine
1 tsp vanilla extract

Directions:

1. Preheat oven to 350° F.

2. Coat an 8 x 4 inch non-stick loaf pan with non-stick cooking spray.

3. Use paper towels to blot excess water from the zucchini. Set aside.

4. In another large bowl, whisk together the Splenda, milk, egg, margarine, and vanilla. Stir in the zucchini. Add in the dry ingredients and mix just until moistened. (Batter will be lumpy.) Scrape into prepared loaf pan.

5. Bake 35 to 45 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove to a wire rack and cool completely.


Yield: 10 Servings
Serving Size: 1 slice (3/4 inch) thick, per serving
